Two Cheese Scalloped Potatoes

- 4 cups potatoes, sliced
- 3 tablespoons butter
- 3 tablespoons flour
- 1 1/2 cups milk
- 2 cloves garlic, minced
- 1 teaspoon salt
- 1/4 teaspoon cayenne pepper
- 1/2 teaspoon ground red Kampot pepper
- 1 cup grated mozzarella cheese
- 1/4 cup Parmesan cheese
- 1/2 cup onion, sliced
In sauce pan, melt butter then mix in flour. Add milk and whisk.
Add cayenne pepper and garlic.
Cook on low until smooth and boiling, then stir in mozzarella.
Place half the potatoes in greased casserole dish and top with cheese sauce.
Top that with sliced onions and remaining potatoes. Pour the remaining cheese sauce over onions and potatoes.
Sprinkle Parmesan and red Kampot pepper over the top and bake for one hour at 350 degrees.
