Chimichurri: Kampot Style

Ingredients

  • 10 cloves garlic
  • 1 teaspoon paprika
  • 1 teaspoon chili powder
  • 1/4 cup flat-leaf parsley
  • 1 teaspoon dried oregano
  • 1 teaspoon salt
  • 1 teaspoon cracked Kampot pepper
  • 2 bay leaves
  • 1/4 cup olive or grapeseed oil
  • 1 cup red wine vinegar

Directions

  1. Finely chop the garlic.

  2. Mix all ingredients together. Cover and allow flavors to meld before serving.
